No Bake Apple Pie Bites

These No Bake Apple Pie Bites will hit the spot and cure any apple pie cravings without spiking your blood sugar, thanks to the plant-based fiber inside. Full of healthy fats like almond butter and pecans, and infused with the ancient energy boosting medjool date, which is packed with vitamins and nutrients with a delicious, sweet flavor.

Make these Apple Pie Bites to snack on throughout the day, before your workout, or as a tasty sweet treat with a cup of herbal tea. Kid-friendly and super nutritious, rest assured, Autumn vibes are on the way!

RECIPE

1 cup organic medjool dates, pitted and chopped

½ cup organic rolled oats

⅔ cup organic dried apples

½ cup unsweetened organic almond butter

¼ cup organic chopped pecans

1 tablespoon organic cinnamon

2 scoops Organic Super Fiber

Instructions

  1. Pit and chop the dates, then soak in hot water for 5-10 minutes, until softened.
  2. Chop pecans and dried apples, set aside.
  3. Combine all ingredients, including drained dates, in a food processor and process until very finely chopped.
  4. Pour the mixture into a large bowl and roll into 12 balls, about 2 tablespoons each.
  5. Refrigerate for at least 15 minutes before serving.

These No Bake Apple Pie Bites have a shelf life of about 1 week, if you don’t eat them all before then!
